- Cherry is a small, round stone fruit with bright red, burgundy red, or yellow with a red blush skin. There is a small hard pit in the center of the fruit. The yellow cherry has yellow flesh while bright red and burgundy red cherry has red flesh. The texture is firm and juicy. Cherry has a sweet flavor with light floral and rose notes. Cherry is generally available from late spring throughout the summertime. It is also available in December from Chile.
- Look for cherries with a bright, shiny appearance without any bruises.
- The stem should be green without any brown discoloration.
- Cherry is firm and plump.

- Cherry should be stored at 30.2ºF – 32ºfF (-1ºC – 0ºC) with a relative humidity of over ninety-five percent and no mist.
- The typical shelf life is two to four weeks. Cherry with stems has a longer shelf life than those without. High humidity is important to avoid shriveling and dry, dark stems.
- Cherry is sensitive to odor. Do not store cherry with any strong aroma products.
- Cherry is sensitive to ethylene, a naturally occurring gas that regulates ripening. Cherry should not be stored with high ethylene-producing products to extend shelf life and avoid quality loss. Cherry produces a very low amount of ethylene.
- Cherry is not sensitive to chilling injury and should be stored as cold as possible without freezing.
