- Coconut is a mature coconut fruit with a brown, hairy, hard shell. The coconut water is replaced by coconut meat as the coconut matures. The coconut meat is firm with a distinct tropical taste. Coconut is available year-round.

- The coconut should feel heavy for its size and free of blemishes and cracking.
- Shake the coconut for a sloshing sound that represents the coconut water in the nut. Always buy the one with more water content in it as an indication of a younger coconut.

- The coconut should be stored at 32ºF – 35ºF (0ºC – 1.5ºC) with a relative humidity of seventy-five to eighty-five percent and no mist.
- The typical shelf life is two months under optimal temperature and relative humidity. Higher temperature decreases the shelf life. At 55ºF – 60ºF (13ºC – 16ºC) with a relative humidity of eighty to eighty-five percent, the shelf life decreases to less than two weeks.
- Avoid low relative humidity and high temperature which may lead to mold and weight loss. A rapid temperature change of 15ºF (8ºC) or more during storage can lead to cracking.
- Coconut is not sensitive to ethylene, a naturally occurring gas that regulates ripening. Coconut produces a very low level to near zero ethylene.
- Coconut is not sensitive to chilling injury.
