  • Guava is a tropical fruit with an oval-shaped. The fruit size is typically between three and a half to four and a half inches. The skin is smooth and yellowish-green in color. The flesh is either creamy white or rose pink. There are small yellow hard seeds that are still edible. As the fruit is ripe, the fragrant flowery aroma gets stronger and the flesh gets sweeter. The inner flesh is usually sweeter and softer than the outer flesh. Guava is available in the summer and from late fall to early spring.

        • Storage

          • Green and partially ripe guava should be stored at 46°F – 50°F (8°C – 10°C) with a relative humidity of ninety to ninety-five percent and no mist. Ripe guava should be stored at 41°F – 46°F (5°C – 8°C) with the same relative humidity and no mist.
          • The typical shelf life for partially ripe guava is two to three weeks and one week for ripe guava. Higher temperature decreases the shelf life for guava.
          • Guava is sensitive to ethylene, a naturally occurring gas that regulates ripening. Guava should not be stored with high ethylene-producing products to extend shelf life and avoid flesh softening and skin color changing. Guava produces a moderate level of ethylene that increases as the fruit ripens.
          • Green and partially ripe guava are sensitive to chilling injury at storage below 45°F (7°C). Symptoms include skin pitting, failure to ripen fruit, and flesh browning. Ripe guava is less sensitive to chilling injury.
